The hand-carved by knife cut of this product gives it a premium touch, flavor, and delicacy in the slices that is only available in a product prepared by Aljomar expert master slicers.
The oldest in Aljomar´s cellar, from 36 to 48 months of natural curing. This is the only ham recommended by awarded Spanish chef Martín Berasategui, winner of 12 Michelin stars.
This product comes from 100% Ibérico pigs, i.e. the progenitors of the Ibérico pig were also 100% Ibérico, giving rise to a purebred animal, commonly known as "Pata Negra".
