Approx. 3 kg wheel of Villacenteno (García Baquero) Manchego cured sheep´s cheese DOP, from the town of Alcázar de San Juan (Ciudad Real), Castilla- La Mancha. In vacuum-sealed packaging.
It has won multiple International awards, including the World Cheese Awards 2018: Gold and Bronze and the World Championship Cheese Contest 2020: Gold.
Appearance: Straw yellow colour with ivory tones typical of Manchegan sheep's milk. Discrete number of small eyes of fermentative origin distributed throughout the cheese matrix.
Aroma: The smell is strongly reminiscent of sheep's milk: warm, sweet and pleasant, complemented by hints of cooked butter and roasted and toasted cinnamon tones.
Taste: Sweet, balanced and intense in flavour. Sweet flavours stand out with hints of caramelised nuts typical of fermented and matured sheep's milk.
Texture: Compact with moderate elactivity. Melt in the mouth and slightly buttery.

The ideal storage temperature is between 1º and 8º C (never above 15º C ). It is advisable to cover the surface of the cheese with waxed paper once it has been cut.
When you are going to eat it, let the cheese rest at room temperature for about 10 minutes to enjoy its full flavour.
For short-term consumption, leave it out of the fridge, between 16º and 20º C, in a wooden-based cheese cooler that insulates it from humidity and allows the cheese to "breathe".
