Made from raw Manchego sheep's milk and matured for 6 to 8 months on its farm Finca La Prudenciana in Tembleque. Pressed paste cheese, with marks on the rind of the flower and the pleita, covered with oil.
The cheese is spread with oil, thus encouraging the growth of moulds, which makes the maturing of the cheese unique and results in a cheese with an intense flavour while maintaining a texture that facilitates the cutting and processing of the cheese.
