This black cooked sausage “Bull Negre” is a traditional, quality cooked sausage made from pork meat and blood with spices and stuffed in a natural hog middle casing.
In most Catalan towns this sausage is called Bull, in Girona is also called Paltruc.
An indispensable condiment for stews, such as peas, beans in the pan or Catalan broad beans. Added in small dices at the end of the dish, leaving it only over low heat, it will give a special taste in our meals. It could also be eaten as it is, accompanied with anchovies and sesame bread.
