140 gr of La Cala Albert Adrià Aperitif (aperitivo) flavour potato chips with vinegar and paprika, from the town of Bullas, Murcia.
La Cala Albert Adrià homemade potato crisps are made with potatoes that have been selected, cut and prepared in a frying pan in a traditional way, to achieve a crunchy texture and an unequaled flavour. The special cut (due to their thickness) makes them an ideal base for creams, dressings, and preserves such as mussels and anchovies.
These potato crisps are a tribute to the Catalan aperitif, to the vermouth of a lifetime, but with the creativity and personal ingenuity of one of the icons of Spanish gastronomy, Albert Adrià.
In the potato chip, La Cala dehydrates the cockle and potato dressing and convert the totally natural aroma (key to make it so special and in the mouth it creates that differential flavour). Then, La Cala applies this technique, in a special machine suitable for this purpose, and then they send their aroma (made with paprika from La Vera with D.O.P. appellation of origin and exclusive to La Cala with 92% purity).
Once it arrives at their factory, their craftsmen attach it to the potato with the right percentage, so that it is fine enough and with the right cut.
They call it "Pata-tapa" (Potato-tapa), with their exclusive cut for La Cala, it perfectly resists any product on top; such as a mussel with its marinade or cream or sauce, as it does not soften. Created expressly for tapas...
