This organic EVOO from the first day of harvesting is Cortijo La Toquera most awaited and beloved EVOO / AOVE. It is the fruit of 4 years of effort and enthusiasm, both in cultivation and production, where the priorities have always been to achieve the highest quality but with the utmost respect for the environment.
It is an intense green fruity of hojiblanca and picuda olive varieties that reminds us of the aromas of flowers and aromatic plants of the Subbética Cordobesa, its origin.
Cortijo La Toquera, which dates back to the 17th century, in the municipality of Rute, in the south of the Subbética region of Córdoba, where the best olive oils in the world are produced, they continue to cultivate the centenary olive trees inherited from our ancestors with the wisdom and know-how they taught us.
The result is a totally natural and artisan Extra Virgin Olive Oil, extracted cold to preserve the polyphenols and aromas that make it unique and unmistakable.
To do this the producer selects the best areas of their estate (solanas) and pick the olives just at the time of veraison (change of colour) to achieve the maximum fruitiness and polyphenols in our EVOO.
Thanks to the short time elapsed between harvesting and milling (3 hours) they manage to obtain an acidity of only 0.17º.
