A cheese made with 100% Manchega sheep's milk. A cheese creation by García Baquero master cheesemaker for lovers of Manchego cheese who are looking for extra intensity in flavour and aroma. A cheese that has also been awarded in the World Cheese Constest 2020 with a Silver Medal for the best Sheep Cheese with more than 9 months of maturation.
Appearance: The interior has a yellow and golden paste with ivory tones typical of Manchegan sheep's milk. There are a few small fermentative eyes distributed throughout the cheese.
Aroma: The smell is reminiscent of sheep's milk; sweet and warm, with hints of cooked butter and toasted and cinnamon tones. There are also hints of mould from the maturing cellars.
Flavour: The flavour is sweet and pleasant, with slight caramelised marks typical of fermented and matured sheep's milk. As it warms up in the mouth, we can appreciate very aromatic floral hints.
Texture: Compact but elastic texture. Very melting in the mouth, slightly buttery but quick and pleasant in the mouth.

The ideal storage temperature is between 1º and 8º C (never above 15º C ). It is advisable to cover the surface of the cheese with waxed paper once it has been cut.
When you are going to eat it, let the cheese rest at room temperature for about 10 minutes to enjoy its full flavour.
For short-term consumption, leave it out of the fridge, between 16º and 20º C, in a wooden-based cheese cooler that insulates it from humidity and allows the cheese to "breathe".
