Mas Rovira's goat's cheese coated with rosemary is a soft paste pasteurised goat's milk cheese with enzymatic coagulation.
This cheese ages for a month in the cellars of the cheese factory located in Sora, Osona, Barcelona. The cheese interior is ivory-white in colour, with a fine texture and a dense, compact, homogeneous interior.
It has a pleasant lactic taste at the beginning, not excessively goaty. It is creamy and sweet as it matures. The smell is lactic and of rosemary with a variable intensity depending on the degree of ripening, a forest scent.
